How to make:
1. Make your pattern, you can trace an actual envelope I decided to try and make my own pattern it turned out to be the perfect size if only I had measured it...
2. Make an even simpler envelope using wax paper. You can make it exactly the same or omit the top flap. Using a glue stick glue the paper envelope and use tape for the wax paper.
3. Simply slide the wax envelope into the paper enlope.
4. Fill with cookies. I got a dozen in mine no problem!
Lastly if it is for "marketing" purposes simply attached a business card, a gift tag would work for other occasions.
What you will need:
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 cup butter, margarine or shortening (softened)
3/4 cups sugar plus a bit extra for rolling
1 teaspoon cream of tartar
1/4 teaspoon salt
1 egg
1 1/2 tablespoons instant coffee
How to make:
Beat together butter/margarine and sugar. Add in instant coffee. Beat in egg. Combine flour, cream of tartar, baking soda and salt. Gradually add to butter/margarine mixture. Roll into balls about 1 inch wide not too big but not to small. Roll balls into sugar and place on an un-greased cookie sheet. In a 350 degrees Fahrenheit oven bake for 7 minutes or 7 minutes 30 seconds depending on your oven.
Cooking note: I like to under bake these babies, if you bake them for 7 minutes they will come out of the oven puffy and look raw but they are NOT once cooled on a cooling rack they un-puff and harden up quite quickly. If you bake them longer these cookies turn hard once cooled and will become "dunking" cookies they are still good but not soft.


i agree with your end baking tip!!! i always like to "under"bake cookies just so they don't go too crunchy on me. besides when they cool down, you get a crunchy exterior and a chewy inside! yum!!
